Can I modify an invoice already sent out to a client?

Yes, Nutcache lets you make changes to an invoice (or an estimate) that was already sent to a client.

When the client will display his invoice (or estimate) a message will notify him that some changes have been made to his invoice and will prompt him to get the updated version.
